Couple of things,

  • AIO vs. air cooler is a question, I kinda like the stability of an AIO and reduced noise/case temp, while the air cooler is cheaper.
  • PSU - I would consider a new model that has the new NVidia GPU power pins requirements
  • SSD - I would consider splurging on a 2 TB nVME SSD, because 1 TB is going to get outdated by the time you upgrade making it useless, with 2TB it keeps its value longer so when you replace it there would still be value in putting it elsewhere.

B550 or X570. If you are not overclocking and not buying low end budget option then I think you are probably fine with most of the stuff out there. If you are planning to use onboard audio (which I think you are) I would at least take a quick look at that before you purchase. I would refuse to buy anything with an ALC892 audio chip since it is very old and kinda shitty. I think a lot of boards have the much newer ALC1200 or equivalent nowadays.

For mainly gaming, 16 GB is still enough. You do not need 32 GB but it would not hurt. Almost everything is sold in pairs so dual channel yeah. You are on DDR4 aren't you? You could just bring it over if you wanted to. 5xxx series is still DDR4.

So overclocking is less of a thing now so people having been not getting to crazy on coolers. Liquid AIO is still fine. With air coolers you don't have to worry about leaks or a pump dying but case compatibility can be an issue with some of the big ones.

The 5600x comes with a bundled cooler that is probably not trash.

There are a lot of options out there so unless there is something specific you are going after (aesthetics) then it's hard to recommend. For air coolers, people talk about Noctua quite often as being very good but you do pay for it. Thermalright is old and respectable. Scythe is kind of a solid budget options.

For liquid coolers I think Corsair has been one of the "default" options for quite a while with decent options in most sizes.

Case is very subjective. NZXT and Fractal both make solid cases.

I don't know what you have now but I don't think PSUs have changed much in the last couple of years so as long as it was decent quality it probably still is decent quality.

I have not been following PSUs as much as I used to but I don't think there have been any PSUs released yet that natively have the new 12-pin power cables. Have to use adapters right now.

NVME, SSD, PCIE gen 3, PCIE gen 4, etc. if we are talking mainly about gaming I don't think that really matters. Might as well go for size like Richard is talking about here and go bigger like 2 TB.   • I have a usb dac amp combo for my audio but yeah i'll keep those onboard in mind. my speaker still attached to the onboard audio.

  • for the PSU im using a pre production model cooler master UCP ultimate lol richard knows. it was from the focus group i think its 900 watt. its not modular.

AIO vs Air Cooling.  If you want to go a bit fancier and quieter I would go with an AIO.  The Arctic 240/280/360 are all top of the line (although not always in stock): https://www.amazon.com/ARCTIC-Liquid-Freezer-All-One/dp/B07WSDLRVP

If you want to go with air I would actually advise against noctua and recommend going with scythe, they're nearly as good and quite a bit less expensive.  https://www.amazon.com/Original-Design-Towers-Cooler-SCFM-2000/dp/B07QMK5R45/

None of the PSU suppliers make pure 12pin connectors, also all the AIB cards use the old 8pin so unless you really want a founder edition I wouldn't worry about it.  If your PSU is old I would recommend getting a new one, possibly a bit beefier than before.  The 3080 is recommended to have a 750w supply so try for that or a little bit higher.  Get a modular PSU, seasonic does have adapter cables for 12pin see here, which I believe seasonic will straight up send you the adapter if you ask them - see here

For storage I'm going to second the recommendation for 2tb.  I will also mention that I think pci-e gen4 is basically useless for gaming so if you can snag a gen3 for cheaper I would go for that.  Recently I've seen some of these gen3 drives go for ~$200 for 2tb which is about as good as it gets.  Keep you eye on /r/buildapcsales and make sure you avoid QLC drives.  One guy who's opinion I respect is newmaxx, feel free to use his guide for what drives you might want. 

I still have a box of 4 gentle typhoons if you need fans, free to a good home.  They're not PWM but they're quiet and very good for radiators.

For the Fractal you can fit up to 360/280 in the front or up to 360/420 in the top or up to 240/280 on the bottom.

So for the NZXT you can fit up to a 240 or a 280 in the front.

The NZXT obviously has less radiator options but a 240 or 280 is still more than enough cooling when you are not overclocking and the NZXT case is overall a fair amount smaller (39 liters for the NZXT vs 57 liters for the Fractal).

If you're going with the fractal I wouldn't go with the regular define 7, unless you want a hard drive rack.  Go for the define 7 compact which is 39 liters and very similar cooling options.

I would also recommend doing 32gb of RAM, it sounds like overkill and most likely is, but it absolutely future proofs you, and considering how many applications seem to run electron and eat RAM for breakfast, it makes sure you're avoid those issues.

soo i do still have a sata storage drive, would i need a drive rack ? i rather not have a drive rack

You can still fit 2x 3.5 drives at the bottom in front of the power supply.  You can also put 2x 2.5 drives behind the motherboard, and another 2x 2.5 drives on top of the PSU shroud.  There's plenty of room for storage. 

Look over the manual, it will help explain what storage and cooling options you have.

Asus does not really make anything "bad" as far as I know so they are pretty safe option. I usually pick based on features; if the board has what I want.

So one thing I still feel unsure about is B550 vs X570 chipset. In MY MIND, the X570 is just the higher end model and therefor better but then you have articles like this on on Anandtech that says they feel that many B550 motherboards are more premium.

I wish I could find a recent and respectable review for that power supply. This review from 5 years ago for the GQ model rates it pretty good but I don't know if things have changed and if there is a difference with the GA model.

The Big Difference is the Chipset Link which is PCIe 4.0 which enables much more high speed USB(10 gbps). I'm not sure about the advantage of PCIe 4.0 since we know GPUs are rarely limited by that and the speed increase to nvME devices are generally inperceptible.

im done i can start building as soon as everything gets here.

was debating hard between the gigabyte auros elite pro and the asus tuf. wanted the rog but its too much and i lose features that i care or i would have to spend north 300.

the tuf cause it has bluetooth 5.0 and usb c in the i/o. and newegg have a promo 20 dollars off. it does have realtek lan vs the intel on the auros.
